Moros y Cristianos – Black Beans and Rice Dish

Prep time: 20 minutes
Cook time: 1 hour 30 minutes
Total time: 1 hour 50 minutes
Yield: 8 servings
Cuban-style black beans cooked with rice.

INGREDIENTS:

1 & 1/2 cups black beans, dried
1/4 cup olive oil for sautéing
2 & 1/2 cups onion, diced
2 & 1/2 cups green pepper, seeded and diced
4 cloves garlic, crushed and chopped
3 teaspoons cumin, ground
1 teaspoon oregano
1 bay leaf
3 tablespoons white vinegar
2 tablespoons tomato paste
2 teaspoons salt
1/2 teaspoon pepper
4 &1/2 cups chicken stock
3 cups long grain white rice

Directions:

Cover the dry beans with about four cups water in a two-quart saucepan. DON’T add any salt yet! Bring to a boil, and boil for three minutes. Remove from the heat and let it stand, covered for one hour.
Drain and rinse the beans. Add enough water to cover once again and bring to a boil; reduce heat to low, cover and cook until tender, about 40 to 50 minutes. Drain.

Rinse the rice with cold water until the water runs clear.

Use a large, eight-quart covered stockpot. Sauté the onion and green pepper in the olive oil until tender. Add the garlic, and sauté another minute or two. Add the tomato paste, black beans, oregano, cumin, bay leaf, and vinegar. Cook for about five minutes, stirring gently.

Add the chicken stock and the rinsed rice. Bring to a boil, reduce heat to low, cover and cook for about 20-30 minutes – until the rice is fully cooked.

Finally, adjust the seasonings by adding salt and pepper to taste. Remove the bay leaf. Serve Hot.

For an added treat: Drizzle some olive oil (don’t be stingy!) over the rice in the pot, and fluff cooked rice gently with a fork.

If plating the rice as a side dish, drizzle a little olive oil over individual servings and garnish with some parsley or cilantro.

Valentine’s Day Recipes

We have gathered the top 2 desserts on the internet for you to create on Valentine’s Day! Here is one RICH red velvet cake made extra red for your love! And the second recipe is Strawberry Shortcake Sushi! Try these recipes out and let Nicolita know how you liked them!

Cake:
2 1/2 cups all purpose flour
1 tsp salt
2 cups of sugar
1 cup butter, softened
2 eggs
1 tbsp cocoa powder
1 1/2 tbsp liquid red food coloring
1 cup buttermilk
1 tsp vanilla extract
1/2 tsp baking soda
1 tbsp cider vinegar

Preheat oven to 350 degrees. Grease and lightly flour 2 or 3 round 9″ cake pans.

Sift flour and salt together, set aside. In the bowl of a stand mixer, combine the butter and sugar. Mix until light and fluffy. Add the eggs one at a time. Mix well after each addition. Add the flour mixture to the bowl alternately with the buttermilk, beginning and ending with flour mixture. Blend in vanilla.

In a small bowl, mix the 1 1/2 tbsp red food coloring and 1 tbsp cocoa powder until a paste forms. Add to the sugar and butter mixture. Mix well. In a small bowl or condiment cup, stir together the baking soda and cider vinegar. This will foam and should be put into the batter immediately after well mixed. After adding the foam mixture, blend on medium-high speed until batter is consistent.

Spoon batter evenly into pans – batter will be very thick! Level top of batter with an offset spatula. Bake for 25-30 minutes, or until cake springs back when pressed in the center. Turn out on wire racks and cool completely.

Cream cheese frosting:

2 – 8oz packages of cream cheese, softened
1 cup butter, softened
2 tsp vanilla extract
4-5 cups sifted confectioners’ sugar

In a large mixing bowl, beat the cream cheese, butter and vanilla together until smooth. With the mixer on low, gradually pour in the confectioners’ sugar. Increase the speed to high and beat until light and fluffy. If mixture is too thick, add a little milk to loosen it. If it is too thin, add additional powdered sugar or put in the refrigerator to firm up.

*If carving cake and coating with crumbs, be sure to put the crumbs on when the icing is fresh and still sticky.

*When making red velvet, I always mix the cocoa powder and liquid red food coloring together to form a paste. Doing this seems to evenly disperse the red color when it gets mixed into the batter. If your cocoa is lumpy, mash it into the food coloring with a fork.

* For the heart template, trace the bottom of a cake pan on wax paper, cut out the 9″ circle. Fold it in half and cut into a heart shape. Lay the paper heart on the cake and trim it down if it doesn’t comfortably fit inside the cake’s circumference.

Strawberry Shortcake Sushi

Strawberry Shortcake Sushi
Recipe adapted from Cooking Light + technique from Sprinkle Bakes

Ingredients:

cake -

2/3 cup all-purpose flour
1 t baking powder
1/4 t salt
1/2 cup sugar
3 eggs + 2 more egg whites
1 t vanilla
2 T powdered sugar, for the towel when wrapping the cake
filling* -

2 cups whipping cream
1/2 cup powdered sugar
1 t vanilla or 1/2 a vanilla bean
1 cup diced strawberries + more for topping
* I had a little less than half left over, so feel free to cut the filling recipe in half and you should be fine.

Directions:

1.Preheat the oven to 400º. Coat a 15 x 10-inch jelly roll cookie sheet with cooking spray; line the bottom with parchment paper, and coat with cooking spray. Set aside.
2.In a small bowl whisk together the flour, baking powder and salt. In a medium bowl using an electric mixer or in the bowl of a stand mixer beat together the eggs and sugar at high speed until pale and fluffy (about 5 minutes). Stir in vanilla.
3.Add the flour mixture half at a time mixing on low until each portion is mixed in completely.
4.Pour batter into prepared pan; spread evenly. Bake for 8-10 minutes or until cake springs back when touched.
5.While the cake is baking sprinkle a clean dish towel with powdered sugar.
6.Remove the cake from the oven. Cut the cake in half long ways so that you have 2 long rectangles. 7.Invert onto the powdered sugared towel. Peel off the parchment and on each side of the towel roll the cakes from the long side toward the center. Flip the towel wrapped cakes over seem-side down on the counter for 30 minutes to an hour to cool.
8.Make filling. Beat together the whipping cream, powdered sugar and vanilla until fluffy and thick. Stir in the strawberries.
9.Unroll the cakes from the towel and either pipe or spread the filling into the center. Roll up so the ends touch and wrap tightly in plastic wrap. Refrigerate for a couple hours or over night.
10.Slice, using a serrated knife into sushi-sized pieces. I ended up with about 18 pieces. Top with a strawberry slice and serve with strawberry coulis (recipe below).

Ingredients:

2 cups quartered and hulled strawberries, mashed
1/4 cup water
3 T granulated sugar
1 T lemon juice

Directions:

Combine strawberries, water, sugar and lemon juice in a blender. Blend until very smooth. Press through a fine mesh strainer to remove seeds. Cover and refrigerate until cool. Place in a small dish for sushi dipping!

Sweet Guava Chicken – Pollo de Guayaba Dulce

Prep time: 10 minutes
Cook time: 40 minutes
Total time: 50 minutes
Yield: 4 servings

A sweet, guava-glazed chicken recipe for the grill.

INGREDIENTS:

juice of 2 medium limes
1/4 cup olive oil
1 tablespoon ground cumin
1/2 teaspoon salt
1/8 teaspoon pepper
4 cloves garlic, mashed
1 (3-pound) chicken, cut-up
salt, pepper, and cumin for seasoning, to taste
Glaze:

1/4 cup guava jelly
1/4 cup apple juice
1/4 cup fresh lemon juice
1/4 cup brown sugar

Directions:

Mix lime juice, olive oil, cumin, salt, pepper, and garlic together. Pour over chicken in a shallow baking dish. A Ziploc® freezer bag works great, too, and allows you to force out the air and coat the chicken with marinade. Cover the chicken and refrigerate for at least 3 hours, preferably overnight.
Discard marinade. Pat chicken dry with a paper towel. Season the chicken with additional salt, pepper, and a little cumin.

Fire up the burners on that gas grill or light those charcoal briquettes to preheat the grilling surface. Grill the chicken over medium heat. (Try to use the indirect heating method if you have a Weber grill or equivalent. This will avoid those oh-so-nasty flare-ups.) Cook for approximately 30 minutes, turning occasionally until chicken begins to brown.

For the glaze, mix guava jelly, apple juice, lemon juice, and brown sugar in a 1-quart saucepan and bring to a boil. Reduce heat to low and simmer, uncovered, stirring frequently until glaze thickens and reduces somewhat, about 5 to 10 minutes; remove from heat.

Brush chicken with glaze mixture frequently during the last 15 minutes of cooking. Once glazed, keep a close eye on the chicken because sugar burns easily and tastes terrible. (Just take our word for it on this one!) Chicken is done when the juices run clear or just clandestinely slice into one of the larger pieces to make sure there are no traces of pink. A meat thermometer is also a handy accessory for the faint of heart!

Valentine’s Day Gift Ideas

So you still don’t know what you want to give your Valentine, or you haven’t put some thought into it. Well Nicolita has some ideas for you! Here is a how-to ‘Scratch-Off Card’ and ’52-Reasons Why I love You’ book. They are the cutest and most personal gifts out there!

1. Print the card onto a cardstock and cut (in order to print you need to sign up). Print the heart template and cut out, then cut a strip of clear Con-Tact paper long enough to make four hearts. Trace around the heart template on the paper side of the Con-Tact paper.

2. To make the scratch-off solution, mix 2 parts metallic acrylic paint with 1 part dishwashing liquid. Using a small, flat paintbrush, apply a thin coat of the scratch-off solution onto the front side of the Con-Tact paper and let dry for an hour. Repeat with a second coat, and add a third coat if your paint looks streaky.

3. Cut out the hearts (following the traced outline), peel off the backing, and place over the heart spaces on the card. Package the card with a new penny.

I printed my inserts onto photo paper, cut them out and stuck them on using a little double sided tape and some tombow glue – which I never use generally as I find it wets and warps the paper – but this time I wanted that to happen to add to the aging effect.
The cards have an antiqued/aged look so I scuffed them up randomly with some sandpaper to make them look less new.

The book is bound together with some Kaisercraft book rings. I simply punched holes twice in each card using one of the spare cards in the pack as a template to ensure all the cards had holes in the same spots!

Frita Cubana – The Original Cuban Hamburger

Prep time: 15 minutes
Cook time: 10 minutes
Total time: 25 minutes
Yield: 6-8 generous patties

Enjoy this authentic Cuban recipe for the ultimate Cuban hamburger.

INGREDIENTS:

Burgers:

1 pound ground beef
3/4 pound ground pork
4 cloves garlic, mashed and finely minced
1/3 cup onion,grated
2 tablespoons ketchup
3/4 teaspoon ground cumin
1 1/2 teaspoons sweet Spanish paprika
Salt & pepper cooked patties to taste
6-8 American-style hamburger or steak buns

Topping:
6-8 cups freshly fried shoestring potatoes
raw onion, sliced(optional)
Glenn’s Not-So-Secret Sauce (MANDATORY – see recipe below)

Use a food processor with a chopping blade to grind together the meats, the minced garlic, and the onion. Blend in the ketchup, cumin, and paprika.
Remove the meat mixture from the food processor and form by hand into round thin patties. Cook on a flat griddle or in a frying pan.

Fritas should be cooked to medium well done, but don’t overcook – they should still be nice and juicy. When the frita is just about cooked through, reduce heat to medium low, squirt on some secret sauce, and let the patties cook just a minute longer.

While the fritas are frying, use a deep fat fryer or frying pan with a couple inches of vegetable oil to fry the shoestring potatoes. Drain on paper towels and lightly salt. Keep warm.

Serve each frita on a traditional American hamburger bun.

IMPORTANT:
Splash plenty of “Glenn’s Not-So-Secret Sauce” on the bun and the patty. The sauce is an ESSENTIAL ingredient in this recipe!

Place the patty on the bun, cover with some sliced onion (if you like), and pile high with fresh, hot, shoe-string style fried potatoes – yes, inside the bun, ON TOP of the meat! Splash a little extra secret sauce on the fries, you’ll be glad you did!

Serve with additional fries on the plate.

Glenn’s Not-So-Secret Frita Sauce

INGREDIENTS:
1 (6-ounce) can tomato paste
1 1/2 cups water
1 teaspoon ground cumin
1 1/2 teaspoons sweet Spanish paprika
1 teaspoon garlic powder
1/4 cup sugar
1/4 cup white vinegar
1 teaspoon salt
Mix all of the ingredients together in a two-quart saucepan.
Bring to a boil stirring constantly.

Reduce heat to low and simmer, stirring occasionally, for 10 to 15 minutes.

Remove from heat and let cool. Use generously in the Frita Cubana recipe above.

Yuca Con Mojo

Prep time: 15 minutes
Cook time: 35 minutes
Total time: 50 minutes
Yield: 8-12 servings

Yuca is another one of the root vegetables that are staples in Cuba. It’s a mainstay dish at parties and at holiday gatherings such as Christmas Eve.

INGREDIENTS:

1 1/2 pounds yuca, peeled, halved and cut into chunks (Frozen yuca may be available in Latin markets in your area)
1 lime (juice from)
6 cloves garlic mashed into 1 teaspoon salt
1/3 cup lemon juice
1/2 cup olive oil
1 onion, chopped fine

-Place yuca in a saucepan; add water until yuca is just covered.
-Add salt and lime juice, and bring to a boil.
-Reduce heat, cover, and simmer until tender – about 30 minutes. Drain.
-Remove the “woody” or fibrous core from the center of the yuca.
-Mash garlic cloves into salt with mortar and pestle.
-Add garlic, lemon juice, and onions to olive oil in a separate saucepan, heat until bubbling, and then pour over yuca.

Toss the yuca and all ingredients lightly while continuing to sauté over medium heat until barely browned, but not crisp!

Cuban Sandwich Dip

Directions:

1. Heat 3 tablespoons butter with about half a small onion.
2. Cook a while then add 2 tablespoons flour. Whisk to form a roux. Keep whisking for about 4 minutes until lightly browned.
3. Add 3 cups milk, bring to a simmer. Once it is simmering, reduce heat.
4. Start adding cheese slowly after heat has come down. Approx 16 oz swiss with maybe some jack thrown in for good measure.
5. When the sauce is nicely formed, add shredded pork, ham, mustard, and pickles to your taste.
6. Serve with toasted baguette rounds.
